Notes:
1. Pictured is a pan of baked beans. I thought it was neat to intersperse those large white lima beans, often called butter beans, with the rest. They were mostly taken as I was near the end of the food line.
2. (generally the second definition) Connoisseur: A person of informed and discriminating taste: a connoisseur of fine wines.
Yes Jim, first time I heard the word connoisseur was when I was in college in a literature subject, we discussed someone who makes the best wine as a connoisseur-an expert, but of late, it became a literal word which could also mean someone who excels or is best in what he does is a connoisseur!

Yes, opinions of experts is a subject of mind. It is about analysis, comparisons, methods, styles etc.

I like your words, "when judged only by its taste a bean is a bean", yeah, a connoisseur is a person can see through the surface and find something hide behind. Nice words, though I don't like to eat beans. :)
